Rubin Winery – Rubin-Agro Ltd. was established in 2013, born out of a hobby and a deep love for wine. Over the years, it has evolved into a commercial-scale winery, with our team and vineyards continuously expanding in the region.
We are located in Balatonkeresztúr, one of the gems of the Balatonboglár Wine Region, which is Somogy County’s wine paradise in South Balaton. From the beginning, our winery has cultivated grapes sustainably, adhering to the principles of organic viticulture. Both our vineyard and winery are certified organic.
Our vineyards span nearly 5 hectares, meticulously managed by organic winemaker Tamás Subosits, who oversees the company alongside his co-owners. Our dedicated and growing team fosters a warm, family-like atmosphere in the daily operations of our young winery. The grape varieties we cultivate include: Olaszrizling (Welschriesling), Chardonnay, Irsai Olivér, Grüner Veltliner, Fetească Neagră, Merlot, Cabernet Sauvignon, and Blaufränkisch (Kékfrankos).
Our goal is to bring these local treasures to as many wine enthusiasts as possible, making our passionate work known and appreciated. Our first commercially released vintage in 2017 achieved significant success. Our wines have received gold and silver awards in numerous wine competitions.

About the Wine Region
The Balatonboglár Wine Region is situated on the southern shore of Lake Balaton, nestled within the arms of the Somogy Hills. The region encompasses 37 settlements, including Balatonkeresztúr, where our winery is located. The total vineyard area covers 3,200 hectares, cultivated by nearly 2,800 growers. Approximately two-thirds of the vineyards are planted with white grape varieties, and one-third with red.
The wine region’s history dates back to Roman times. In 1498, King Vladislaus II granted Somogy County a coat of arms featuring a grape cluster—the first such instance in the country.

In the South Balaton area, loess soils prevail, with the finest vineyards boasting high lime content, occasionally mixed with stone and clay. The northern boundary of the wine region is defined by the surface of Lake Balaton, creating a unique and special microclimate. Thanks to these natural conditions, carefully selected grape varieties, and a high level of professional expertise, three winemakers from the region have been honored with the prestigious “Winemaker of the Year” award. Additionally, our wine region has received the “Winery of the Year” accolade. We aspire to achieve similar distinctions in the future.
The wine region offers excellent conditions for producing light, elegant sparkling wines with vibrant acidity, as well as increasingly popular frizzante wines, using grape varieties such as Chardonnay, Irsai Olivér, Királyleányka, and Muscat Blanc. From Olaszrizling, Rhine Riesling, Pinot Gris, and Furmint, we craft robust, full-bodied wines with significant aging potential, which find their place in the country’s top gastronomy.
The red wines of South Balaton have garnered prestigious international recognition—in Bordeaux, Brussels, and Paris—demonstrating that varieties like Merlot, Cabernet Sauvignon, Pinot Noir, Kékfrankos, and Cabernet Franc thrive here. This varietal composition is also ideal for producing the currently fashionable rosé wines.

Our Goal:
Certified Organic Winery

Rubin Winery produces organic wines, and several of our newly acquired vineyards, as well as the winery itself, are currently undergoing the conversion period. Our entire production and processing processes—from vineyard cultivation to grape processing and bottling—already comply with organic farming requirements and are under continuous supervision by Biokontroll Hungária. However, obtaining full organic certification requires a mandatory three-year transition period. Thanks to our perseverance and diligence, we believe this is merely a formality.
This approach is inherently innovative, as we only use contact sprays without systemic chemicals, allowing the pure taste of the grapes to shine through in our wines! Within three years, we aim to fully adopt lunar calendar-based farming and transition to biodynamic wine production. Such wineries are rare in the country, making our products truly unique in the market. In our 2019 offerings, our team is working on producing orange wine, and we are also preparing an Olaszrizling intended for the Balaton Wine label. Additionally, we value Hungarian traditions and plan to cultivate two Carpathian Basin grape varieties—Fetească Neagră and Csókaszőlő—on our lands in the near future, further expanding our wine selection.

Organic wine signifies the complete utilization of natural ingredients, embodying the true taste of nature. It’s important to note that the journey of organic wine begins right from the planting process.
- Soil preparation, which immediately involves organic fertilization.
- We exclusively use organic manure, which begins to lose its value upon exposure to air. Therefore, immediate action is crucial. Since it decomposes slowly in the soil, we plant it at a minimum depth of 70 cm, thereby supporting the development of high-quality fruit from the very first steps.
- Grafted grapevines are planted into this organically enriched soil, receiving extra care and nutrients from the outset, allowing their roots to develop perfectly.
Caring for organic grapes requires special attention, and our winery places great emphasis on this.
- Grapevine protection is carried out without chemicals or herbicides
The focus is on cultivation using natural methods, with regular manual hoeing between the vines to remove harmful weeds.
- Instead, we harness the power of nature for protection
- We install birdhouses, which help protect the fruit by preying on the vineyard’s enemies (e.g., against the American grapevine leafhopper virus).
- We maintain our areas through continuous mowing, allowing us to use beneficial weeds for vine protection (e.g., attracting ladybugs that consume harmful mites affecting the vines).
- During plant protection, we use only non-absorbable agents, meaning they remain on the external surface and are not ingested with the wine.
- Plant protection relies solely on natural substances (copper, sulfur, plant extracts—orange oil).
- These non-absorbable plant protection agents are easily washed off by rain, requiring continuous attention and frequent reapplication to prevent various diseases from affecting the vines (fungi, downy mildew, powdery mildew).
PROHIBITED:
- The use of artificial fertilizers,
- Growth regulators,
- And any application of propagation materials produced through genetic manipulation.
Our winery represents high quality, and therefore:
- It produces limited capital. Only 0,5-1,5 kg of grapes per vine per variety.
- Manual pruning is used to remove the excess.
- The same root and leaf only make up the nutrient-rich grape material in this quantity and this is essential for good wine.
- This type of production maintains, and in some cases increases, the fertility of the soil, resulting in a higher quality of raw material year after year.
The foundation of our biotechnology is that our wines do not contain:
- Enzymes
- Colorants
- Stabilizing agents
Thanks to the excellent quality of our raw materials, these additives are unnecessary.

The balance of plant-soil-environment, considering cosmic and earthly forces.
It is well-known that the Moon affects ocean tides. According to biodynamic observations, similar processes occur within the soil, where moisture levels fluctuate—rising at times and receding at others. The Moon also reflects the Sun’s rays differently throughout its phases, impacting plant growth. Additionally, the changing seasons are considered. Our work aligns with these natural rhythms.
Biodynamic philosophy views the farm as a unified entity. In viticulture, this means focusing not only on the fruit but also giving significant attention to the soil, treating it as a living organism that requires nourishment.
Our company continuously monitors the lunar calendar to schedule agricultural tasks accordingly. Following vineyard activities, winemaking proceeds in the biodynamic spirit, avoiding chemicals, artificial processes, cultured yeasts, and other technologies to produce quality wines.
A descending Moon primarily stimulates root growth. In vineyards, this period is suitable for pruning, harvesting, and plant protection measures. A new Moon favors the regeneration of organs and tissues. An ascending Moon promotes the growth of above-ground parts, making it an ideal time for grafting and sowing cover crops between rows. Full Moon is recommended for nutrient supplementation, as conditions are optimal for nutrient uptake.
The essence of this approach emphasizes quality over quantity. Comparative observations suggest that biodynamic wines possess more robust, pure flavors and maintain their quality longer, as farming activities are conducted in harmony with lunar phases.
Preserving our environment, including arable lands, is of strategic importance. Initiatives that lead to soil purification deserve support. Our wines are produced through such mindful processes.

Our 2022 Vintage
“In 2022, the grape ripening period was marked by drought, followed by rainfall during harvest in our region. Consequently, weather conditions significantly influenced the scheduling of harvest days. Overall, we produced beautiful, concentrated wines. Our selection expanded with a new specialty—the 2021 vintage Heyya! Zöldveltelini orange wine. This initial experiment was produced in limited quantities and is intended as a refined, contemplative wine. We also continued our technical developments to craft our wines with even more modern equipment and greater precision.”
